On a recent trip to Germany, I was amazed to see locals enjoying ice cream even amidst freezing temperatures. For me, frozen desserts are relegated to warm weather treats when they can be refreshing in addition to satisfying my sweet tooth. But not all ice cream need be “refreshing.” With the right combination of warming spices and sundae-like sauces, it’s possible to indulge in this favored dessert without chilling yourself to the bone. Here’s a winter-inspired maple ice cream to share with friends and family on cold winter nights:
(PS – This recipe is among the easiest ice cream recipes I’ve ever made. Starting with chilled ingredients and liquid sweeteners removes the need to heat and cool your “batter” before placing in an ice cream maker.)
Maple Ice Cream with Spiced Cranberry Sauce
Ingredients
2 cups whole milk
1 cup heavy cream
¾ cup Grade B maple syrup
¼ cup brown rice syrup
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
Pinch sea salt
8 oz fresh cranberries, washed and dried
1/3 cup brown rice syrup
2 ½ tablespoons water
1 cinnamon stick
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 teaspoon orange zest
Freshly squeezed orange juice
Procedure
- In a blender, combine the milk, cream, maple syrup, rice syrup, vanilla extract, cinnamon, and sea salt. Blend to combine, then chill thoroughly before transferring to the bowl of an ice cream maker. Process via manufacturers directions.
- Place in freezer and remove 5 to 10 minutes prior to serving to soften slightly.
- In a medium saucepan, combine the cranberries, rice syrup, and water. Over medium heat, bring the mixture to a boil then reduce to a simmer. Add the cinnamon stick, allspice, and nutmeg. Stir to combine.
- Simmer for an additional 5 to 7 minutes. The cranberries will begin to burst. Remove from heat, and add the orange juice and zest.
- Allow to cool completely before transferring to refrigerator.
- Serve chilled overtop Maple Ice Cream.

Yes, I know there is milk and cream, but in moderation I condone homemade anything over store brought. Plus this looks really delicious!
