Don’t ignore your sweet cravings this time of year, indulge them! Holistic and Healthy Halloween Recipes: Mouth-Watering Scary Delights….
1. Superfood Popcorn – Ghoulish “Stew”
with nutritional yeast, dulse, and parmesan
Recipe by Bauman College Staff
Serves 4 – 6
Ingredients
3/4 cup organic popcorn kernels
1 tsp nutritional yeast
1 tsp grated Parmesan cheese
2 tsp curry powder
1 tsp dulse flakes
1 tsp melted butter or extra virgin olive oil
sea salt, to taste
Procedure
Place the popcorn kernels in an air popper and pop according to manufacturer’s directions. Transfer to a large bowl and set aside.
In a small bowl mix together the nutritional yeast, Parmesan cheese, dulse, curry powder, and sea salt until evenly combined.
Lightly coat the popcorn with melted butter or olive oil, then toss with the spice mixture until evenly coated.
Alternatively, melt the butter over medium heat in a large saucepan. Add in the popcorn kernels, make sure to coat with the butter, then cover the saucepan.
As the popcorn heats, keep the saucepan moving to create circulation and keep the kernels from burning. Once most of the kernels have popped, transfer to a large bowl.
Toss the popcorn with the spice mixture until evenly coated and serve in “spooky cauldrons.” Enjoy!
2. Peppermint Truffle Gravestones
with raw cacao powder, ground nuts and seeds, and protein powder
Recipe by Bauman College Staff
Makes 12 truffles (one inch round)
Ingredients
1/2 cup sunflower seeds
8 Medjool dates
3 Tbs coconut cream
2 tsp protein supplement 3 Tbs + 1 tsp raw cacao powder
1 Tbs water, plus 1 teaspoon if necessary
2 drops peppermint extract
1 pinch salt
Additional 1/2 cup raw cacao powder, for dusting truffles
Procedure
Add the sunflower seeds to the food processor and pulse until finely ground. Then add the Medjool dates and pulse again until well incorporated.
Add coconut cream, protein powder, and raw cacao and pulse until combined. Next, add the water a little at a time to get the desired consistency. To test, try rolling some of the mixture into a ball. It should stick together when pressed but not be wet.
Lastly, add the peppermint extract and salt. Start with just one drop of the extract and increase if necessary. The mixture should just have a hint of mint flavor.
Place the remaining 1⁄2 cup of raw cacao powder on a flat plate.
Pinch off a little of the mixture and roll into a ball about the size of a quarter. Roll the truffle in the cacao powder and transfer to a serving platter. Repeat with the rest of the mixture.
VARIATION: Carob powder can be used instead of cacao powder for those who are sensitive to cocoa. It will have a different flavor but will still be delicious. Carob and cacao can also be used 50/50 in this recipe for a delicious and nutritious treat.
3. Deviled Egg Spiders
Use your favorite Deviled Eggs recipe and cut pitted black olives in half lengthwise. Use one half on top of the egg for the body, cutting the remaining half into eight thin slices to form the creepy legs.
4. Snack-o-Lantern
Carve a jack-o-lantern face in an orange and fill with fruit salad. Your kids will enjoy this healthy and ghoulish treat! The only tools you need are a small, sharp paring knife and a grapefruit spoon. For the ultimate recipe & directions, visit Mr. Breakfast.
5. Haunted Apple Bites
Makes 4
Ingredients
1 apple of your choice
15 almond slivers (or a few whole almonds, slicing them into spear-like shapes)
1 red or green grape (these are for the eyes. you can serve these without the eyes or get creative and use anything you would like!)
Procedure
Quarter the apple and remove the core. The 4 quarters will each be a “mouth.” Place the flesh side on your cutting board and cut a V-shaped wedge from the outside of the apple (the skin). Discard (or eat) the piece you just cut and press slivered almonds in this area, to look like teeth.
Tip: If you’re not going to serve them right away, baste the apples with orange juice to keep them from browning.
Optional: Add a swipe of peanut butter to the “mouth” area before putting the almonds in.
