Unique Summer Smoothie Recipes
Each makes about 2 cups
Peach Mint Smoothie
- 2 cups sliced peaches
- 4 spearmint leaves
- 1/2 cup rice milk
- 1 teaspoon vanilla
- Pinch sea salt
- Stevia or raw honey to sweeten
Coconut Melon Smoothie
- 2 cups diced melon, such as Galia or Honeydew
- 1/4 cup full-fat coconut milk
- 1 tablespoon lime juice
- Pinch sea salt
- Stevia or raw honey to sweeten
Cherry Beet Smoothie
- 1 cup pitted cherries
- 1/2 cup chilled cooked beets
- 1/2 cup apple juice
- 1 1/2 tablespoons lemon juice
- Stevia or raw honey to sweeten
To make
Combine ingredients in a blender and puree until smooth. For the best texture, freeze or partially freeze the fruit before blending. Add 2-3 large ice cubes when blending if fruit is not frozen in advance.
Variation for Chocolate Cherry Beet Smoothie
Add 1 tablespoon of raw cacao for a Black Forest Cake-like version of this oh-so-good-for-you smoothie.
